• 2 day cold soak.
• Fermented with indigenous yeast but there is no contact.
• Gently pressed using a Vaslin basket press, followed by a 24-hour settling period before racking to older French oak barrels.
• 100% malolactic fermentation.
• Aged for 10 months in old French oak.
• Bottled unfined.
