With day jobs making some of the ultra-coveted wines of Burgundy, it’s no surprise that de Villaine and Seysses have, over the years, held themselves to rigorously high standards, continuously elevating their already-remarkable wines. When first scouting for a vineyard to work on together, they spent a full year searching but still hadn’t found land that matched their world-class standards.

At last, in the summer of 1989, an estate located in the Var, due east of Aix-en-Provence, hit the bullseye for them. The hillside plantings enjoyed perfect southern exposure, and the spot was cooler than Aix yet bathed in Provençal sunshine—crucial elements of terroir that help produce wines with characteristic freshness and elegance.

On hot afternoons, the steady breeze off the Mediterranean takes the bite out of the summer swelter, refreshing the vines. At nearly 1,400 feet in elevation, the temperature plunges when the sun sets. In 2022, cool nights kept the acids firm, buttressing the juiciness of the low-yielding Cinsault, Syrah, Grenache, and Merlot vines.
