Tiare’s 30-acre property in Collio, positioned between the Adriatic Sea and the Julian Alps, experiences wide temperature swings between day and night that foster an excellent balance of ripeness and acidity in the grapes. The estate’s meticulous soil management pinpoints the parts of the vineyard with the ideal microbial activity to provide a healthy level of nutrients for the vines.
The vineyard team carefully monitors the grapes so they can pick them at the exact moment when aromatic ripeness reaches its peak. The wine’s gorgeous texture and vibrancy are preserved by aging in stainless-steel tanks, ultimately yielding a beautifully perfumed, mineral-rich Sauvignon Blanc.
