There are few sites as perfect for Cabernet Sauvignon as Immortal Estate, which sits on the Sonoma County side of Spring Mountain, 1700 feet above sea level, on slopes steep enough to make you look over your shoulder at the abyss below and double-check to make sure your boots are flat on the ground. 

“When I took my first trip to see this special vineyard,” proprietor Tim Martin told us, “I saw something that looked like it was out of Europe. With a 55-degree slope, it represented something that was just not done anymore and allows us to get fruit profiles you really can’t find here. You aren’t allowed to plant anymore on these types of steep hills.”

The unique site, out of necessity, is tended only by hand, and that effort has yielded a wine of haunting power and grace. It’s a Wine Access favorite year in and year out, and this one is drinking beautifully now—and will just get better in the cellar.
