The 2021 Sin Azufre is the no-sulfur-added cuvée of Pinot Noir from organic and biodynamic grapes from vines planted in 1955. It fermented in concrete with indigenous yeasts for 15 days and matured 60% in French oak barrels, 30% in concrete tanks and 10% in clay amphorae for nine months. It’s light and fresh with 12% alcohol. The first vintage of this wine in 2013 changed everything, and today all the wines have very little sulfur. The nose is alive and expressive, denoting a living wine with hints of organic earth and tons of flowers and translucent red berries. It’s clean, precise and chiseled, with pungent flavor, weightless but full of energy and light, with purity of flavors and symmetry. There are no hints of a wine with no sulfur added. It’s just a superb expression of Pinot. Purity without funkiness. 12,000 bottles produced. It was bottled in November 2021.

Varietal
Pinot Noir
Regularly described as being the grape varietal responsible for producing the world’s most romantic wines, Pinot Noir has long been associated with elegance and a broad range of flavors The name means ‘black pine’ in French, and this is due to the fact that the fruit of this particular varietal is especially dark in color, and hangs in a conical shape, like that of a pine cone. Despite being grown today in almost every wine producing country, Pinot Noir is a notoriously difficult grape variety to cultivate. This is because it is especially susceptible to various forms of mold and mildew, and thrives best in steady, cooler climates. However, the quality of the fruit has ensured that wineries and vintners have persevered with the varietal, and new technologies and methods have overcome many of the problems it presents. Alongside this, the wide popularity and enthusiasm for this grape has ensured it will remain a firm favorite amongst wine drinkers for many years to come.
