Do you crave a Chardonnay at the end of the day? Or is a velvety Merlot more your style? You can get the flavor of both when you purchase our award-winning Sho Chiku Bai Classic Junmai. When you serve it warm or at room temperature, the flavor changes, giving you the best of two worlds. You don’t have to choose between flavors tonight — just pull out a bottle of classic Junmai sake, and work your way from one flavor profile to the next over a lingering meal. With a savory complex taste, it is the best sake for food-pairing sake and great served both chilled or warmed.
Served chilled this Classic Junmai Sake offers a very fine texture with harmonious aromas and flavors of macadamia nuts, Chai spice (cardamom, nutmeg), vanilla, heavy cream, and freshly sliced bread.
Served at room temperature, notes of mineral, creme fraiche, sourdough bread, custard, umami, and apples emerge.
When warmed to around 100º F., the texture and flavor build, bringing out more intense umami while still retaining softness of texture. Savory elements of salted custard, cocoa nib, banana bread, toasted nuts, and mineral are evident.

Sake
Sake is a Japanese rice wine made from fermented rice, water, yeast, and koji mold (Aspergillus oryzae), which converts starch into fermentable sugars. Unlike beer, which undergoes sequential fermentation, sake is brewed using multiple parallel fermentation, where saccharification and fermentation occur simultaneously. It typically ranges from 13-16% ABV and is classified based on rice polishing ratio and whether brewer’s alcohol is added. Sake styles vary widely. Junmai sakes, made without added alcohol, tend to have a rich, umami-driven character, while Ginjo and Daiginjo sakes—brewed with highly polished rice—offer delicate, aromatic profiles with notes of melon, pear, and floral elegance. Futsushu, an everyday table sake, is less refined but widely consumed. Sake can be enjoyed chilled, warm, or at room temperature, depending on the variety. With a smooth texture and balanced acidity, it pairs well with sushi, tempura, grilled fish, and a variety of Japanese dishes.
