Chasing the perfect white wine, Austin Peterson crafts this California blend from eight varieties sourced from all over the state. With aromatics lent by Sauvignon Blanc and Viognier and body provided by grapes native to the Southern Rhône, it’s a vibrant yet rich and creamy white that has been showcased by the glass at Thomas Keller’s Bouchon in Yountville. Fascinating, infinitely drinkable, and capable of aging several years, this is Ovid’s precision and inspiration, applied outside their Pritchard Hill terroir.
