And despite its deep roots, Crémant de Limoux might still be one of the least appreciated wine categories in France. The area’s been making sparkling wine since 1531, when Benedictine monks in a nearby abbey wrote down the first known recipe for bubbly. Limoux winemakers thus have generations of knowledge to draw from—and that expertise is apparent in the region’s fantastic crémants.
Faire la Fête makes a strong case for Limoux as a serious challenger to Champagne. Last year, the winery landed a spot on the Robb Report’s “20 Best Wines under $100,” where their bubbly rubs shoulders with wines four times the price. And this dry rosé offering, with its creamy mousse and ripe red-fruit profile, takes that elite value to the next level. Firm acidity gives the richness a stout backbone, while a citrus lift keeps things breezy.
Made from 65% Chardonnay, 20% Chenin Blanc, and 15% Pinot Noir, the wine is pressed from whole clusters. It’s then aged in neutral barrels and finally conditioned for 15 months en tirage, with the traditional method allowing the mousse to fully develop in the bottle.
The result is festive, food-friendly, and infinitely crushable.
