2019 Francine & Olivier Savary Chablis

When we put together our first-ever collection of wines for our MICHELIN club, Francine and Oliver Savary’s Chablis was an easy first choice. “Every sommelier has a nice Chablis up their sleeve,” said Charlotte Randolph, the Beverage Director at two-starred Californios, who helped curate the collection, “now your members can too.”

If MICHELIN-starred sommeliers aren’t your gold standard, then consider that Savary has the imprimatur of both star importer Kermit Lynch and also Jean-Marie Raveneau of Domaine Raveneau, whose $1600 bottles are among the most coveted wines in Chablis. The 2019 Savary Chablis is exactly the sort of locally-famous bottle that we’re always on the hunt for when we’re in Europe—and it’s prompted quite the frenzy back at the office.

This is a wine that hugely overdelivers, boasting Premier Cru quality at a regional price—a signature of the Savary family, who Kermit Lynch describes as one of the most hard-working in the area. Never satisfied with making run-of-the-mill wine, they’ve refined their farming and winemaking every year since Domaine Savary’s founding in 1984, earning regional acclaim and the respect of producers like Raveneau.
